Mexican Dip
I have yet to meet anybody who does not love this bean dip.
For me, it conjures up happy memories of Christmas or New Year parties, (or any other party for that matter), my children, family and friends from home and abroad.
Every batch tastes slightly different and if you want the exact recipe I made on Sunday
for the Lamma crowd, here goes:
In the following order, layer in a baking dish that can go into the oven.
Since I discovered La Morena refried black beans, I don't use anything else.

2. Make your own salsa. I use so much Coriander (Cilantro) that it resembles a pesto!
On Sundy, I used a whole tub of sour cream plus about a third tub leftover thick Greek yoghurt.

Bought some vintage cheddar cheese at Park N Shop, simply because it was a good price! Any cheese will do, of course.
Ideally, you should get lameboy to grate the cheese for you. But, alas! Cape Town is too far away.

Bake in a moderate oven until the cheese is melted and everything is warmed through.
Serve with Dorito's or Corn chips.
